Mini Pancake Stack for Mum
Ingredients:
- 1 cup self-raising flour
- 1 egg
- 1 cup milk
- 1 tbsp sugar
- Butter for cooking
- Fresh berries and honey for topping
Method:
- In a bowl, whisk together the flour, egg, milk, and sugar until smooth.
- Heat a non-stick pan and melt a little butter.
- Spoon small amounts of batter into the pan to make mini pancakes. Cook for about 1–2 minutes on each side until golden.
- Stack the pancakes on a plate, top with fresh berries, and drizzle with honey.
- Add a handwritten “Happy Mother’s Day” card for extra smiles!
